Sorullos de Maiz | Corn Fritters

INGREDIENTS:

- 2 cups water

- 1 1/4 cups P.A.N brand pre-cooked yellow corn meal (https://goo.gl/snP5At)

- 1 tablespoon butter, melted

- 1 teaspoon salt

- 3 tablespoons granulated sugar

- A few strips of your favorite block cheese (Colby Jack shown here)

- Oil for frying


DIRECTIONS:

- Add water, corn meal, melted butter, salt, and sugar to bowl

- Mix until a play dough consistency forms, adding additional corn meal as necessary

- Form a small patty in your hand and add a cheese strip to the center

- Roll the patty between your hands to form a "cigar-shape" and until it is completely sealed

- Fry on medium heat until golden brown, about 3-4 minutes per side


Serve with mayo-ketchup (savory) or dusted with powdered sugar (sweet). Enjoy!
