Authentic Coquito with Actual Coconut

Most cultures have a cold, delicious, milky drink that brings family and friends together, whether it's by the fireside, christmas tree, or parranda circle. In Puerto Rico, we have Coquito: a rich, cold, creamy and frothy coconut-based drink infused with soul-warming spices like nutmeg and cinnamon. In a nutshell, it's every Puerto Rican's liquid dream. But let's be honest - when is the last time you had *authentic* coquito made with ACTUAL coconut? With a little more effort, you can make genuine coquito that will satisfy and impress everyone you share a glass with. Just keep reading . . .





WHAT YOU'LL NEED:


• Food Processor

• Blender

• Cheesecloth

INGREDIENTS:

• 1 brown coconut

• 1 can condensed milk

• 1/2 can coconut milk

• 3 large cinnamon sticks

• 1/2 tablespoon nutmeg

• 1 bottle coconut rum (750mL)

• 4 cups room temperature water


DIRECTIONS:

1. Use a screw driver to poke a hole through the most tender eye of the coconut. Drain the coconut water and discard the water.

2. Place the coconut on a kitchen towel. Use the back of a knife to tap along the perforated line while rotating the coconut.

3. Open the coconut into halves. Use a butter knife to carefully remove the meat of the coconut from the shell. Rinse coconut meat thoroughly.

4. Use a food processor to chop/grate the coconut. When done, place in a clean bowl.

5. Add water. Stir. Let sit for 15 minutes.

6. Add the condensed milk, nutmeg, and coconut milk. Stir. Taste mixture and add additional condensed milk and/or coconut milk to your liking.

7. Add the coconut rum. Stir. Taste. Add additional rum to your liking.

8. Use a blender to blend the mixture for 1 minute 30 seconds.

9. Place cinnamon sticks in the bottle you'll be using to store the coquito. Pour the mixture into the bottle using a funnel.

10. Keep refrigerated. Serve cold. Shake well before serving.
