Corned Beef (Puerto Rican Style)

This corned beef recipe is infused with island flavors and is super simple to follow. It's comfort food that is sure to please even the pickiest of eaters and biggest of appetites. Not to mention it's affordable!




INGREDIENTS:

• 1 can corned beef

• 1 tablespoon oil

• 1/2 cup diced onions

• 2 tablespoons garlic

• 2 tablespoons sofrito

• 1/2 cup green peppers, cut into strips

• 1/2 cup roasted red peppers, cut into strips

• About 10 olives

• 1 packet sazon con culatro y achiote

• Ground pepper, Oregano, and Paprika to taste

• 1/2 teaspoon Sriracha

• 2 tablespoons tomato paste

• 1/4 cup water

• 1 egg

• Homemade or frozen french fries


DIRECTIONS:

1. Heat oil on medium-low heat

2. Add onions and garlic. Stir-fry.

3. Add sofrito, green peppers, red peppers, and olives. Stir.

4. Add sazon, black pepper, oregano, paprika, Sriracha, and tomato paste. Stir to combine.

5. Add corned beef, using wooden spoon to break up the meat.

6. Add water and mix well.

7. Reduce heat to a low. Cover with lid and cook for about 7 to 15 minutes, until some of the water has evaporated and the mixture has thickened.

8. Suggested Serving: Serve the corned beef on white rice and top it with homemade french fries and a fried egg (or an egg cooked to your liking). Add a few slices of avocado on the side and enjoy!
