Escabeche de Guineitos

Perhaps you saw this side dish passed around the dinner table as a child or you remember your grandmother making it in the kitchen. This recipe for Escabeche de Guineitos (Guineos) makes the most mouth-watering juicy, flavorful, and garlicky green bananas that are incredible with any meat and rice. Best of all, it's super simple to make! Buen Provecho!

INGREDIENTS:

• About 20 green bananas

• 1 cup onions, sliced or diced

• Handful of stuffed olives, sliced

• 3 tablespoons fresh garlic

• 1/2 cup roasted red sweet peppers, cut into strips

• 1/2 cup oil (canola, vegetable, corn, etc.)

• 4 tablespoons olive oil

• 2 or 3 tablespoons vinegar, depending on your taste

• Salt and Pepper, to taste


DIRECTIONS:

1. Peel green bananas. Boil in salt water for about 30 minutes or until tender

2. Cut into about 1/2 inch slices

3. Add onions, olives, garlic, roasted sweet red peppers, oil, olive oil, and vinegar

4. Add salt and pepper, to taste

5. Mix well. Taste. Add additional salt and/or pepper if necessary

6. Refrigerate if not serving immediately.
